Ingredients
- 4 4 Alaska Cod fillets (6 to 8 oz. each), fresh, thawed or frozen
- 2 Tablespoons 2 Tablespoons Szechwan (hot) chili paste
- 2 Tablespoons 2 Tablespoons rice wine or dry sherry
- 1 Tablespoon 1 Tablespoon sesame oil
- 1 cup 1 cup green onions, cut in long shreds
- 2 Tablespoons 2 Tablespoons sesame seeds

- Rinse any ice glaze from frozen Alaska Cod under cold water; pat dry with paper towel. Blend chili paste, wine and sesame oil. Brush
- mixture onto cod fillets; top with green onions.
- Bring 1-inch of water to boil in large pan. Turn off heat and place Chinese bamboo steamer, wire basket or vegetable steamer in pan. Place
- cod fillets in the steamer and return water to a boil. Cover pan loosely and cook for 8 to 10 minutes for frozen cod or 4 to 6 minutes for
- fresh/thawed fish. Cook just until fish is opaque throughout. Garnish with sesame seeds.
- Cook's tip: Serve with steamed ginger rice.
