Ingredients
- 1 can 1 can (14.75 oz.) traditional pack Alaska salmon OR 2 cans or pouches (6 to 7.1 oz. each) skinless, boneless salmon, drained and chunked
- 1/3 cup 1/3 cup light mayonnaise
- 1 Tablespoon 1 Tablespoon lemon juice
- 2 teaspoons 2 teaspoons Dijon mustard
- 1 Tablespoon 1 Tablespoon capers, drained, chopped if large (optional)
- 1/3 cup 1/3 cup finely diced celery
- 1/3 cup 1/3 cup finely diced onion
- 1/4 cup 1/4 cup dill or sweet pickle relish, drained
- Dash of Tabasco or pinch of black pepper
- 1 Tablespoon 1 Tablespoon chopped fresh dill or 1/2 to 1 teaspoon dried dill weed
- 8 slices 8 slices whole-grain bread
- 24 24 thin slices cucumber
- 4 4 leaves green or red leaf lettuce
- Fiesta Spread:
- 1 can 1 can (14.75 oz.) traditional pack Alaska salmon OR 2 cans or pouches (6 to 7.1 oz. each) skinless, boneless salmon, drained and chunked
- 1/2 cup 1/2 cup chunky spicy salsa, drained (if runny)
- 1/4 cup 1/4 cup light mayonnaise
- 1 cup 1 cup finely chopped celery, carrot, jicama, or zucchini
- 1 1 fresh minced jalapeo pepper (2 to 3 tablespoons, or to taste)
- Assorted breads for sandwiches (pita, wheat, sourdough, bagels, etc.)
- Lettuce or spinach leaves, if desired
- Makes about 3 cups (4 to 6 servings).
- Cooks tip: Rinsed and drained canned corn or canned black beans can be substituted for the chopped vegetables.
- Kids Favorite Salmon Salad Spread:
- 1 can 1 can or pouch (6 to 7.5 oz.) Alaska salmon, drained and chunked
- 1/4 cup 1/4 cup light mayonnaise
- 2 teaspoons 2 teaspoons fresh chopped dill or 1/2 teaspoon dried dill weed
- 6 slices 6 slices white or whole wheat bread
- Tomato slices Tomato slices
- Lettuce leaves
- Makes 3 servings. Recipe may be doubled using 1 can (14.75 oz.) traditional pack Alaska salmon or 2 cans or pouches (6 to 7.1 oz. each)

Instructions
- For each spread, thoroughly blend all ingredients except bread and lettuce/spinach/cucumber. Spread 1/2 to 3/4 cup mixture into pita pocket
- half or onto one bread slice/bagel half. Top with cucumber slices, tomatoes and/or lettuce/spinach leaves, if desired, and bread top. Serve
- immediately.
