Ingredients
- 1 1 large cucumber, peeled with some green stripes showing, halved lengthwise, seeded, and cut crosswise into 1/3-inch slices
- 1 1 white onion, halved and sliced 1/8-inch, rinsed
- 1 cup 1 cup each red and yellow bell peppers, diced
- 2 Tablespoons 2 Tablespoons toasted sesame oil
- 1 cup 1 cup white distilled vinegar
- 3/4 3/4 to 1 cup sugar, to taste
- 1/4 teaspoon 1/4 teaspoon crushed red pepper flakes (or use an Asian chili condiment)
- 2 Tablespoons 2 Tablespoons toasted white sesame seeds
- 2 teaspoons 2 teaspoons black sesame seeds (optional)
- 1/2 teaspoon 1/2 teaspoon kosher salt
- 1 package 1 package (8 oz.) Alaska Surimi Seafood (Imitation Crab)

Instructions
- In a large bowl, mix together cucumber, onion and peppers.
- In a separate bowl, whisk together sesame oil, vinegar, sugar, red pepper flakes, sesame seeds and salt. Mix until sugar is dissolved.
- Pour dressing over cucumber mixture and refrigerate at least 4 hours before serving. Gently stir in Alaska Surimi Seafood just before
- serving.
