Instructions
  1. Rice and Vegetable:
  2. - In a large bowl blend the rice with the black beans and cilantro
  3. - Hold warm
  4. - In another bowl, add the mushrooms, peppers, onion, and blend with cumin and cilantro
  5. - Hold warm
  6. Fish:
  7. - Season the Wild Alaska fish of choice with salt and pepper
  8. - Dredge both sides in masa or A/P flour, shake off excess
  9. - Heat large skillet, add canola oil
  10. - Place fish in heated oil, cook 2-3 minutes, turn, and cook until done about 2-3 minutes
  11. - Remove.
  12. One Serving:
  13. - Place 2 cups of the rice and bean mix in the bottom of a serving bowl
  14. - Top with 1/4 cup of pico de gallo
  15. - Cover with 2 ozs. of the mixed vegetable blend
  16. - Add the cooked fish
  17. - Top the fish with 1 Tbsp. of pico de gallo
