Ingredients
- 2 2 pounds wild Alaska Halibut or Cod
- 1 Tablespoon 1 Tablespoon paprika
- 1 Tablespoon 1 Tablespoon cumin
- 1 teaspoon 1 teaspoon oregano
- 1 teaspoon 1 teaspoon chipotle flake (or chili powder)
- 1/4 teaspoon 1/4 teaspoon white pepper
- 1/2 teaspoon 1/2 teaspoon black pepper
- 1/4 teaspoon 1/4 teaspoon pequin chili ground (or 1/8 cayenne powder)
- 1 teaspoon 1 teaspoon garlic salt
- 1 Tablespoon 1 Tablespoon salt
- Vegetable oil for sauting, as needed

- Cut Alaska Halibut or Cod into 1 inch cubes. Combine spices thoroughly in a large mixing bowl. Toss fish cubes with the spice mixture.
- In a large saut pan (12 inches or larger), heat enough oil to coat the bottom of the pan. When the oil is hot enough to simmer, add 1/4 of
- the fish cubes. Brown on all sides, cooking just until fish is opaque throughout. Transfer to a sheet pan and keep warm in a 150 oven.
- Repeat the process with the rest of the fish, 1/4 batch at a time.
- Serve with guacamole, your favorite salsa and warm tortillas.
