Ingredients
- 4 4 Alaska Rockfish fillets (about 4 to 8 oz. each), fresh, thawed or frozen
- 1-1/2 1-1/2 to 2 Tablespoons jerk seasoning
- 2 Tablespoons 2 Tablespoons olive oil
- 2 Tablespoons 2 Tablespoons orange juice
- 1 Tablespoon 1 Tablespoon lite soy sauce
- 1 Tablespoon 1 Tablespoon fresh lime juice
- 1 Tablespoon 1 Tablespoon apple cider vinegar

- Rinse any ice glaze from frozen Alaska Rockfish under cold water; pat dry with paper towel. Place fillets in gallon-size resealable bag
- (cut fillets crosswise, if needed, to fit). In small bowl or measuring cup, blend jerk seasoning, olive oil, orange juice, soy sauce, lime
- juice and vinegar; pour marinade over fish. Seal bag and turn several times to coat. Marinate in refrigerator for 15 to 30 minutes.
- Remove fillets and discard marinade. Spray-coat or oil grill/broiler/saut pan; heat over medium-high heat. Cook 6 to 8 minutes per side for
- frozen rockfish or 3 to 5 minutes per side for fresh/thawed fish. Cook just until fish is opaque throughout.
